How to make Ice Cream at Home - Quick Tutorial - Recipes by Warren Nash

Hey guys, it's Warren and Summer is upon us.
What better thing to make than ice cream.
Here's my really simple tutorial on how tomake a basic ice cream recipe.
Believe it or not, all ice cream starts offas is custard, so we need to begin by making
a custard base.
For 1 litres worth of ice cream, pour 120mlof whole milk and 300ml of whipping cream
into a saucepan.
Bring up to a simmering point over a mediumheat.
Meanwhile, separate the yolks from the whitesfrom 4 eggs and it's the yolks you'll need
to keep to make the custard.
Pour the four egg yolks into a large mixingbowl followed by 70g of caster sugar.
Using either an electric hand whisk or a foodmixer, thoroughly combine the ingredients
together until the mixture is nice and thickand pale.
When the cream and milk has come up to a simmeringpoint, remove from the heat.
Slowly begin whisking the sugar and egg mixturewhilst carefully pouring in the hot cream
and milk.
Once done, take the mixture and pour intoa clean saucepan.
If you're making a basic vanilla ice cream,you'll also need to add some vanilla extract
of the seeds from a vanilla pod now.
Begin stirring over a low heat continuouslyuntil the mixture starts to thicken.
It's important to keep it over a low heat,otherwise the eggs will scramble.
You'll know it's thick enough when the custardis able to stick to the back of a wooden spoon.
When that's the case, pour the custard intoa heatproof bowl, cover and leave to chill
thoroughly in the fridge.
If you're making any other flavoured ice creams,you can make these flavourings in the meantime.
For a strawberry flavour ice cream, take somestrawberries that have been blended and sieved
into a saucepan, pour in some sugar then heatover a medium heat until reduced down and
it's nice and syrupy.
Leave to chill thoroughly.
Or, for a chocolate flavouring, add some chocolateand hazelnut spread, or some melted chocolate
into the custard whilst it's thickening up.
Then leave to chill in the fridge.
Once everything is chilled, take the bowlfrom the ice cream maker.
With the paddle in place, pour in the custard,plus any other flavourings you've made.
Place the bowl back into the ice cream makerwith the lid on then power it up.
Set the desired hardness setting for yourice cream, then let the machine run it's course.
If you have any add-in ingredients (like crushedhazelnuts for example), add these in 15 minutes
before the ice cream maker has finished.
When the machine say's it's finished, or whenthe ice cream is nice and thick and churned,
remove the ice cream from the machine.
Separate into freezer-proof containers.
If the ice cream is still a little soft, leaveto firm up for another hour or so in the freezer.
There you have it, that's how to make you'revery own ice cream.
Trust me, when it's home made, it'll tastedelicious.
